Goat cheese, prosciutto and fig tartines
2 thick slices of rye bread
2 tbs olive oil
150 gr soft goat cheese
100 gr prosciutto
2 fresh figs
2 tbs honey
freshly ground pepper
few sprigs thyme
Preaheat oven to 200 C.
Cut the figs into slices, sprinkle with olive oil, salt and pepper and roast for 15 minutes.
Rub slices of bread with olive oil and salt and pepper and roast for about 10 minutes, until golden brown and crispy.
Smear goat cheese on top and put back into the oven for 2 more minutes.
Divide the prosciutto over the goat cheese toasts, take the figs from the oven and place them on top.
Drizzle with honey, add some more salt and pepper and finish with some thyme.
