BREAKFAST SALAD

A bunch of baby spinach, 4 cherry tomatoes cut in quarters, one avocado, sliced, 3-4 slices of Parma ham, a few flakes of hard matured cheese, a few leaves of fresh mint, freshly ground black pepper, one egg, olive oil, balsamic vinegar

Arrange all the ingredients, apart from the egg, on a large plate. Drizzle with olive oil en vinegar. In a large saucepan, boil water with one tsp. of white vinegar. Crack an egg to a bowl. Stir the water to create a whirl. Carefully add the egg. Cook for 2-3 minutes. Place the poached egg on top of the salad. Sprinkle with freshly ground pepper.
